Bo Kho is a Vietnamese beef stew with tomato, lemongrass, star anise, ginger and fish sauce. Vietnam`s occupation by France has influenced its cuisine. The richness of spices calls for a fruity wine with low-round tannins. Syrah from Northern Rhône or Pinot Noir from Burgundy or Alto Adige are excellent choices.
