Recioto di Soave is a straw wine made of dried grapes with ancient origins.
The name comes from dialect "recia" (ear), indicating the part of the bunch used to hang it when drying (hanging by the ears).
In 1998, it was the first wine in Veneto to receive DOCG denomination.
Grapes are hand-picked, spread out on mats and left to rest for 5-6 months in drying rooms (fruttaio).
Gently pressed and fermented, the juice will have to spend at least one year in oak barriques before beeing bottled.
Veneto is famous for its capital Venezia, and the wines Prosecco, Soave, and Amarone.
