About Taleggio
Taleggio is a Cow cheese from Val Taleggio in Italy.
It is a Washed Rind cheese with thin crust and a strong aroma, but the flavor is comparatively mild and fruity.
Washed Rind cheeses have been produced in Europe since the Middle Ages.
The process of washing the rind as the cheese matures, keeps it soft and develops great flavours.
