  • Climate

Cold Climate = Less Ripe. Green Fruit, Citrus. More Acidic.

Warm Climate = More Ripe. Stone and Tropical Fruit. More Sweet.

Oak Barrels can be used to ferment or mature wines. The toasted wood releases aromas of cloves, coconut, cedar and vanilla.
